Pecan Pie Mini Muffins


These are not healthy muffins like some are, but these are certainly yummy! The Princess got this recipe from her Grandma Carol. Last time we were at Carol's she had baked a batch of these and we put a pretty good dent in her bag of muffins. When Mom and Marv were here we baked some. Evidently not enough though, because Marv said we could make a couple hundred more of them!
Pecan Pie Mini Muffins
1 cup brown sugar
1/2 cup flour
1 cup pecans, chopped
2/3 cup butter, melted
2 eggs, beaten
In a bowl, combine the brown sugar, flour and pecans; set aside. Combine the butter and beaten eggs. Stir into the brown sugar mixture. Fill greased and floured miniature muffin cups 2/3 full. Bake at 350* for 22-25 minutes or until a toothpick comes out clean. Immediately remove muffins from pan to cool.
