
Some friends of ours were having trouble with their phone. Knowing that the King works for a phone company they asked him to come over and take a look at it. Well, rather to take a listen to it; as they have static in their line. When he was done, Amy asked the King if he would like some eggs. The King loves eggs, he would eat four or six eggs every day if I would make them every day! He told her yes, we could use some eggs. She gave him ten dozen. When I came home and opened the fridge, I had to laugh. That is a lot of cartons of eggs! The King said Amy had another ten or twelve dozen eggs in her fridge plus a bucket of that day's eggs that she had not cleaned yet. I guess they have forty chickens that are currently laying eggs.
Last night I made a salad out of a Rachel Ray magazine that called for boiled eggs. I boiled some extra eggs to keep in the fridge for breakfast or as a snack. I packed two boiled eggs in the King's lunch today, along with some of last night's leftover salad and chicken. I will be boiling more eggs today and making egg salad. The King will be having egg salad sandwiches in his lunch tomorrow and Friday.

You probably already know this, but you can freeze eggs, too. From what I understand, you can scramble an egg and put it into an ice cube tray. After they are frozen, remove them from the tray and pop the egg cubes into a ziploc bag.
ReplyDeleteThis winter when you are baking and the hens ain't layin' so much, thaw and use the eggs in your cookies, cakes and stuff.
If I were still up north, of course, you could share them with me. :)
I would love to have a good supply of fresh eggs. Well, maybe a dozen at a time :)
