
Before I started the Christmas baking I was looking through cookbooks for different cookie recipes I wanted to make. Some of them I marked, some of them I didn't. If there are several recipes in one book I want to try, I just set the book to the side. While going through this process, I saw several recipes I wanted to try that called for cranberries. I made sure I bought six pounds of cranberries; that will be enough for baking with, enough for Trucker to eat plain and enough for a few cranberry dishes over the holidays.
Once it was time to start the baking, I could only find one recipe that called for cranberries. All the rest called for craisins. Shoot! Half way through December I bought three pounds of craisins. As soon as the craisins were in the house, I couldn't find the recipes that listed craisins in the ingredients. Plus, things got busier then and I didn’t have as much time to look for them either. Sounds like a good excuse, don’t ya think?!
Now we are in the middle of January and I still have one or two pounds of cranberries and a pound of craisins! Good thing we like both of them. Good thing Valentine’s Day is coming up, I can make some pretty treats with red in them. Maybe we will try some cranberry pancakes, craisins in our oatmeal, oatmeal craisin cookies and a few meals made with cranberries and craisins.
Next year I better mark my recipes better.
