Baked Cranberry Pudding

I tried a new recipe yesterday. I thought it was really good and worth sharing.





Baked Cranberry Pudding


2 cups flour


1 cup sugar


2 1/2 teaspoons baking powder


3 tablespoons melted shortening (I used butter)


2/3 cup milk


1 egg


2 cups cranberries


Hot Butter Sauce




Sift the flour, sugar and baking powder into a mixer bowl. Add the shortening, milk and egg. Beat for 2 minutes. Stir in the cranberries. Pour into a buttered 9-inch square baking dish.




Bake at 350 degrees for 40 minutes. Cut into 3-inch squares. Serve with Hot Buttered Sauce.




Yield: 9 squares




Hot Butter Sauce


1/2 cup butter


1 cup sugar


3/4 cup light cream or milk (I used milk)




Melt the butter in a double boiler over hot water. Add the sugar and light cream. (I didn't use a double boiler. I used a sauce pan and kept the heat low).




Cook over medium heat for 5 minutes, stirring occasionally.




Yield: 2 cups

I bought this cookbook several years ago while on a family vacation to the Upper Peninsula of Michigan. There are quite a few recipes I use from this book on a regular basis.

  1. This recipe was great. I made it last night and Marv has eaten half already and he doesn't even care much for cranberries. He thought they were cherries. Then again he was eating during THE GAME, maybe he didn't even know he was eating.
    I love the picture!! That's my favorite little pine tree. I have so many pics of it, but I don't think I have any with snow. We'll have to work on that.
